Wheat Thin Sandwiches?

Although it rained most of the day, the weather cooperated for our last night with the Carew’s. Julie and I had planned a special dinner for the kids – all of their favorites, plus some veggies – just because we try to be good Mom’s. We also splurged on some Mommy Juice (a good bottle of Cab), to go along with the meal. Burgers, chicken tenders (grilled), asparagus, fruit, Brie…and Wheat Thins. Yes, I said Wheat Thins! They turned out to be the most fun item on the menu. As we began cooking and eating in shifts (due to the limited size of the grill and cook top), Cormac (who really is a Chef in training) decided to make “mini-burgers”. He had his hamburger and chicken cut in to small pieces and then sandwiched them between two Wheat Thins - adding ingredients to the sandwiches as the meal progressed. Each one had a different combination of foods. I was so amazed to see a seven year old mixing foods together, as Berk usually practices the “separate but equal” approach. Cormac was having so much fun that the other two (Berk and Finnioula) had to join in. What a HUGE treat! We all laughed and really enjoyed our last camp side dinner together. We ended the night with smores for all – and a sugar high that set the stage for some much needed pre bed time rock climbing.
